Las Codornices, managed by Diana and Héctor Ovalle, exemplifies a modern approach to coffee production, emphasizing efficiency and sustainability. Situated in Guatemala's Huehuetenango region at an elevation of 1,900 meters above sea level, the farm cultivates a diverse array of coffee varieties, including Bourbon, Caturra, Typica, Pacamara, Maragogype, Geisha, and Villa Sarchí.

Given the area's arid conditions, Diana and Héctor have innovated by constructing retention tanks to collect rainwater, enabling efficient irrigation across their 9-hectare farm. Due to limited water availability, they specialize in honey and natural processing methods, consistently producing coffees with pronounced fruity characteristics. Their commitment to quality is evident through meticulous quality control during and after harvest.

Beyond coffee, the Ovalles diversify their farm's output by cultivating hibiscus and lemons. Their openness and dedication have highlighted Las Codornices' offerings in speciality coffee selections.
